A Day in the Life of a Micro Baker

Welcome to my latest Bakery Blog. I thought I’d share a little glimpse into what my baking days actually look like. It’s early, it’s busy, and yes it usually starts while most people are still fast asleep!



My alarm goes off at 3:30am, and I head straight downstairs to the kitchen. The oven’s already on, filling the room with a gentle warmth that makes those early starts a bit more bearable. First up: the sourdough loaves. I take twelve out of the fridge, lay them out on the mats, score each one, a quick flick of the blade across the top and into the oven they go, I then set the all important timer.


Then it’s onto the fan oven, which I switch on and leave to heat while I deal with the rest of the morning prep. There’s a line-up of things that need proving, croissants, cinnamon buns along with anything else and I get them all arranged and ready, placing them carefully on my (very homemade) proving setup: a warm, slightly steamy corner of the kitchen that does the job just fine.


Once the fan oven’s up to temperature, I slide in the Blueberry and Frangipane slices. From there, the pace picks up, it’s all about timing! I’ve got trays of bread coming out, pastries going in, buns needing finishing off, slices needing to cool. The kitchen is a mix of smells from bread to croissants.


By the time everything is baked, packed, and ready, it’s usually around 9ish, then I’m off, either to the fantastic Home Decor & Gift shop on the high street, House to Haven, or over to Cranfield Market at the community centre. I then set up the stall with my helpers and then sell. It’s a long shift, but it’s a good one, one of my favourite parts of a Saturday morning is chatting to all the customers, a lot of them have become good friends.


So that’s my morning! Early, full-on, and fuelled by dough and cups of tea.
